AVANT-PROPOS

On connaît maintenant la patrie primitive de presque toutes les plantes
cultivées. Les botanistes ont retrouvé, à l’état spontané, c’est-à-dire
sauvage, le plus grand nombre des espèces végétales utiles à l’homme.
Mais, depuis le point initial de leur mise en culture jusqu’au moment
présent, combien d’étapes parcourues dont le souvenir est à jamais
perdu! On aurait désiré pouvoir les suivre dans leurs migrations chez
les différents peuples, voir leurs transformations successives sous
l’influence du changement de milieu, assister à la naissance des
variétés de plus en plus améliorées par l’effet de la sélection
naturelle ou par la main intelligente de l’homme. Une telle histoire
complète des végétaux cultivés, si elle était possible, serait en même
temps une véritable histoire de la civilisation.
